Chicken Smothered in Onions
For such a simple dish, it really has a fantastic flavor! It starts with slowly caramelizing onions until they take on a deep reddish brown hue. Add a little salt, pepper, burgundy wine and boneless dark meat chicken and stew the mixture until the meat nearly falls apart. The chicken becomes very tender and absorbs all the flavors. (low carb, low fat)

Chicken with Mushrooms & Marsala Wine Sauce
I've been preparing this dish for clients as long as I can remember and it's always been a favorite! Sautéed chicken cutlets with mushrooms and a luxurious Marsala wine sauce. (low fat)

Chicken Breasts Stuffed with Spinach and Feta Cheese
Tender breast cutlets stuffed with a mixture of spinach, feta cheese, spices and roasted peppers. (low fat)

Soulful Chicken with Butterbeans
This is an old family favorite of ours. Beans and chicken seem to have a natural affinity for each other. The beans seem to give the chicken a kind of caramel taste and the stock produced from the chicken really enhances the bean taste. This is definitely a comfort dish! Best prepared with dark meat chicken because of the long cooking time. (low carb)

Turkey & Black Bean Chili
Rather than try to be like beef, this chili stands out on its own with unique ingredients like coffee and chocolate (you know anything with chocolate's got to be good!). This chili has a real strong bold taste without being more than just "pleasantly" spicy. (Black beans can be omitted by request.) (low carb, low fat)

Authentic Indian Chicken Curry
Boneless chicken stewed in a tomato and onion sauce with Indian spices. The combination produces very tender chicken that is seasoned all the way through. (low carb, low fat)

Chicken Scaloppini with Shiitake Mushroom Sauce
What a blast of mushrooms! A hint of thyme and ginger give this Asian-inspired dish an interesting twist. Great over jasmine rice. (low carb, low fat)

Pecan-Crusted Chicken Cordon Bleu
Cordon Bleu (French for blue ribbon) consists of ham and a Swiss cheese, like Gruyère, sandwiched between two pieces of chicken, which is then breaded and fried. In this low carb version of mine, we skip the breading and replace it with ground pecans. Personally, I think it's an improvement! (low carb)

Chicken Enchiladas
A true classic of Mexican cuisine. Shredded dark meat chicken is simmered in a robust tomato & chile sauce and stuffed in a double roll of corn tortillas.

Chicken Parmesan
This traditional Italian dish consists of breaded chicken cutlets served with my own marinara sauce and topped with three cheeses. For a lower carb version, I skip the breading altogether and sauté the chicken. (low carb-by request, low fat)

Chicken Piccata
An Italian classic, "Piccata" originally referred to scalloped veal served with a parsleyed lemon sauce. In this dish chicken sits in for the veal and I like to add a little dry vermouth to mellow the sauce a bit. The low-carb, non-breaded version tastes just as fantastic. (low carb, low fat)

Roast of Turkey Breast
This is the juiciest, most flavorful turkey you've ever had. I can say this with certainty! (low carb, low fat)

Pistachio-Crusted Chicken Breasts
This also was originally a recipe in the South Beach Diet book. I've adapted it to my own style and tastes. I have one client who enjoys it so much she makes me prepare it for her EVERY WEEK! (Delicious served with avocado purée sauce.) (low carb, low fat)

Chicken in Apricot Sauce
Very light and refreshing. Breast of chicken poached in a ginger and apricot sauce, topped with apricot halves. (low fat)

Chicken Tagine with Almonds & Saffron
A tagine /tuh-zheen/ is a Moroccan stew. This has ground almonds, onions, celery and saffron. It's cooked slowly over carrots and potatoes in a tightly sealed pot. The flavors play across your entire palate. (low carb-without carrots & potatoes, low fat)

Chicken & Broccoli Casserole
a.k.a., Chicken Divan. Chicken Divan is a traditional dish of creamed chicken with broccoli. I like to add mushrooms to mine. And then we top it with cheese. Extremely kid friendly. Also makes a great comfort dish if you're looking for something to give a friend in convalescence.

Chicken Divan Pot Pie
Another one of my own little creations and family favorite. Chicken Divan is a traditional dish of creamed chicken with broccoli. In this variation we added mushrooms and put it into a homemade flaky pie crust. Ooh, la-la!

Chicken Saltimbocca
The term "Saltimbocca" refers to an ancient Roman specialty made of finely sliced veal sprinkled with sage and topped with a thin slice of prosciutto. It's sautéed in butter then braised in white wine. Here, the veal is substituted with breast of chicken and then rolled before sautéing. I also add a slice of provolone which leaks out during braising and blends with the sauce. Yum! (low carb, low fat)

Chicken Burgundy with Cremini & Whole Shallots
Breast of chicken sautéed and then cooked in a delicious red wine sauce with whole cremini mushrooms and shallots. (This item is pictured in our photo gallery.) (low carb, low fat)

Chicken with Riesling
Here's a nice, feel-good, home style chicken dish fancied up a bit. Chicken pieces pan sautéed and then braised in broth and Riesling wine. Very tender and highly flavorful. (low carb, low fat)

Chicken Toscana with Cannelini
Wow! Six different herbs, a little pancetta, and a twist of lemon. Cannelini beans are Italian white beans that are shaped like kidney beans. They become very creamy while the chicken stews. (low carb, low fat)

Sautéed Chicken with Green Olives & Cilantro
This North African style dish is robust with the flavors of ginger, garlic and chopped green olives and accented by a touch of saffron. Great served over rice. (low carb, low fat)

Chicken Dijon
Tender, sautéed breast of chicken topped with a wonderful low fat Dijon cream and decorated with red, yellow and green peppers. (low carb, low fat)

Chicken with Banana Curry
Here's a unique dish from Morocco. Boneless chicken is stewed in a banana purée with warm spices. The mild acidity of the bananas tenderizes the chicken and adds a faint note of sweetness. It's a real treat! (low fat)

Chicken with Mustard Seed & Onion Sauce
Tender sautéed breast of chicken with a sauce of toasted mustard seeds and caramelized onions and a touch of Eastern spices! The sauce is soft and silky and almost seems sweet. (low carb, low fat)

Spinach & Ricotta Stuffed Chicken Breasts
Breast of chicken with a delicious center of spinach and ricotta in a citrus-vermouth sauce. (low carb, low fat)

Chicken Breasts with Spinach, Leek & Saffron Sauce
Tender, boneless breast of chicken sautéed and topped with leeks simmered in a saffron wine sauce and served over fresh spinach. (low carb, low fat)

Grilled Chicken Sausage over Black Beans
Don't miss this one! These sausages are out of this world! Fresh, organic Hans Brand Chicken Sausages with Roasted Peppers grilled over a slow fire and served over my own black beans. (low carb, low fat)

Creole Chicken Fricassee with Tasso Sauce
Real Cajun comfort food! White or dark pieces are dredged in Creole-seasoned flour and stewed with onions and peppers with non-fat milk. I add diced bits of home-cured tasso, which is a type of smoked Cajun-cured ham that's used to boost flavor in dishes, much like pancetta is used in Italian food. (low fat)

Chile-Lime Grilled Chicken
Marinated in a chile-lime sauce then perfectly grilled with a light mesquite flavor. This marinade produces a meat that is tender and juicy, whether breast or dark meat. And the lime in the marinade helps caramelize the outside layers to give a nice succulent flavor. Specify white or dark meat. (Not spicy at all.) (low carb, low fat)

Beef Selections

Grilled Lime Yaki
This is a fantastic Asian-inspired beef dish. Very thinly sliced grilled flank steak marinated in fresh-squeezed lime juice, Worcestershire sauce, and Asian spices. (low carb, low fat)

Lamb Tagine with Butternut Squash & Chickpeas
Some clients have said they could eat this dish every week if I offered it! Lamb lovers will enjoy the tender, stewed Moroccan-style lamb with cinnamon perfectly accompanied by aromatic butternut squash. Great over rice! (low carb)

Carne Asada with Refried Beans & Spanish Rice
Carne Asada (Spanish for "Grilled Beef") is the quintessential Mexican meal! Beef skirt steak is marinated to imbue it with tremendous flavor. Grilled over a hot charcoal fire to seal in the juices! Enjoy with flour tortillas. (For a more healthful option, request Incan-Spiced Quinoa in place of the rice and refried beans. Quinoa is a grain that looks like couscous and has a buttery flavor. The best thing about quinoa is it's the only grain that is a complete protein.) (low fat)

Braised Beef Brisket
Tender, slow-cooked sliced brisket served with a red wine and onion sauce. (low carb, low fat)

Chef Chip's Secret Chili Recipe
I ain't gonna tell ya what's in it because then you'll steal my recipe and make it yourself and forget to credit me for it! But this chili is just the best darn chili you ever had! Beans or no beans, your choice.

Meatloaf en Croûte
"en croûte" means "in a crust." And that's what this is. Scrumptious meatloaf encased in a buttery flaky crust, served au jus.

Beef Stroganoff
Named after the Russian Count Paul Stroganov. This classic dish has been altered so much from the original that it was hard to find an authentic recipe. My recipe was handed to me from a native Russian so hopefully mine is authentic! But you can hardly go wrong with the beef tenderloin tips and ½ a cup of Russian vodka that go into this dish! It practically melts in your mouth. With a few minor changes this is a great-tasting low-fat dish. Traditionally served with rice pilaf. (low carb, low fat-by request)

Roast of Beef Tenderloin with Red Wine Reduction

Grilled Beef Tenderloin Steaks with Grilled Veggies
Thick, succulent tenderloin fillets seasoned with my own grilling spice grilled to your liking. Served with a medley of grilled veggies (peppers and onions, yellow squash and asparagus). I could eat this all summer long! (low carb, low fat)

Chip's Mexican Dirty Rice
This dish was born out of trying to figure out what to do with leftovers from an enchilada dinner. Maybe one day I'll find out it's not so original! But it's traditional Mexican rice done pilaf style with enchilada sauce and ground beef. GREAT kid food. This is my three-year-old's primary staple.

Sukiyaki
Known in Japan as the "friendship dish" because it appeals to foreigners. Thinly sliced beef stir-fried with celery, mushrooms, spinach and scallions and served in broth. Best enjoyed with short-grain brown rice. (low carb-sans the rice, low fat)

Carbonnade a la Flamande
This is a Belgian beef stew braised in a dark amber beer with a French herb blend and lots of onions. Sounds good, huh? It is! The meat practically melts in your mouth!

Mongolian Beef
A classic Chinese dish of thinly sliced beef in a dark, tangy, slightly sweet sauce with green onions.

Beef Lasagne
I found this recipe in an issue of Cook's Illustrated and it was so good I didn't change a thing! This is the most luxurious lasagna you ever had!

Baked Ziti
Everybody loves a good dish of baked ziti! Ziti are plain, tubular pastas. The sauce in this dish is a tomato sauce with beef and lots of cheese!

Pork Selections

Herb-Stuffed Pork Loin
A whole pork loin butterflied into thirds and coated with a pesto of 4 herbs, garlic, olive oil and Parmesan, then rolled up and roasted just until cooked through but still very juicy. This method ensures a meat that's flavored through and through and moist. Served with a pan sauce. (low carb, low fat)

Italian Sausage Smothered in Peppers with Spinach
This comfort dish makes a frequent appearance on Italian bistro menus. I prepare mine with fresh spinach to make the flavors more complex. This dish is equally delicious with turkey Italian sausage instead of the usual pork and transforms it into a very low-fat entrée. (low carb, low fat-by request)

Pork Loin Chops in Dijon Cream Sauce
Braised pork cutlets topped with a tangy creamy mustard sauce. A very simple and very popular dish. The sauce looks and tastes great but actually has almost no fat at all! (low carb, low fat)

Stuffed Pork Loin Chops
I learned this recipe from a close friend of mine who is also a Personal Chef. Seasoned with rosemary and coarsely ground black pepper and topped with a white wine mustard sauce. Guaranteed to make the taste buds of any self-respecting Southerner sing!

Pork Loin Roast with Cognac-Prune Sauce
This roast is the pork loin with the ribs still attached. The ribs are normally cut off the loin and are referred to as baby back ribs. The roast is soaked in brine solution for several hours which causes the meat to be extra juicy. Then it's roasted at a very high temperature to seal in those juices, then sliced into individual chops and topped with pan gravy and brandy-scented prunes. (low carb, low fat)

Pork (or Chicken) Jambalaya
Mmm! Jambalaya is the quintessential Cajun comfort dish. Lots of flavored rice, succulent sausage and tender dark-meat pork. Contrary to what most non-Louisianans may think, "Cajun" is not synonymous with "fiery hot." Although my jambalaya is well seasoned, it's just "pleasantly" spicy, as I like to call it.

Seafood Selections

Sexy Salmon
Delicious salmon steaks stuffed with my own crab meat stuffing.

Creole Shrimp Stew
This dish packs a powerful flavor without all the heat people seem to think Cajuns use. Shrimp in a dark roux with onions, peppers and garlic.

Maw-Maw's Shrimp Vermicelli
My grandmother won an award for this recipe. Made with vermicelli pasta tossed with tender shrimp and whole garlic and topped with toasted Parmesan cheese. (low fat)

Maw-Maw's Shrimp with Eggplant Casserole
Another of my grandmother's dishes. And it's always been a real popular item on my menus. It's very simple; not much more than shrimp, eggplant, onions and bell peppers. Very good over rice. (low carb, low fat)

Tilapia with Moroccan Cumin Paste
This is a spicy dish. I make a paste of cumin, chilies, olive oil and lemon juice and marinate the fish for a few minutes before cooking. Great over rice. (low carb, low fat)

Szechuan Dry-Braised Shrimp
This is a fabulous dish-regardless of how you like Asian foods! I use jumbo shrimp in this recipe and they are dry-braised in an egg wash to seal in the juices and tenderness of the shrimp. Then they are simmered briefly in a Szechuan & ginger sauce. Fabulous!

Roasted Salmon over Curried Spinach
Fillet of salmon quick-roasted in a very hot oven with fresh spinach in a very light curry sauce. (low carb, low fat)

Spinach & Pesto Stuffed Salmon
The bold taste of pesto works well with salmon. This dish is just as good with the salmon served on a bed of spinach as it is stuffed with it. (low carb)

Tilapia/Salmon Puttanesca
Puttanesca refers to the typical Mediterranean mélange of tomatoes, onions, capers, black olives and herbs. For those of you who may not be too fond of salmon, this dish is equally tasty with tilapia. (low carb, low fat)

Scampi
Delicious plump shrimp in a garlic wine sauce. We cut the butter in half with extra virgin olive oil to make this dish a little more healthful. (low carb)

Rosemary Broiled Salmon
Lightly seasoned with olive oil, shredded garlic, rosemary and dry white wine. This is the best way I've found to broil a piece of salmon (Superb with Rainbow Trout, when available) (low carb, low fat)

Tilapia Verde
A Japanese-style dish of tilapia, wrapped in green lettuce leaves with shiitake mushrooms and steamed over leeks, broccoli, snow peas and carrots. Great served with white rice. (low carb, low fat)

Nut & Veggie Halibut
Thick, roasted fillet of halibut stuffed with a mirepoix of finely diced onions, peppers, celery, toasted almonds, pine nuts and a hint of lime. (low carb, low fat)

Swordfish with Horseradish Almond Crust & Mango Sauce
Deliciously mild swordfish topped with a horseradish crust standing in a wonderful Caribbean mango sauce. Swordfish has gotten a bad name for flavor and texture because it often gets over-cooked or was not fresh when prepared. But when prepared properly from fresh, it has a wonderful buttery texture—one of my very favorite fishes. (low fat)

Southwestern Halibut/Tilapia
Fillet of halibut* or tilapia in a spicy preparation of spices, garlic, red bell peppers and white wine reduction. (Pictured on the Photo Gallery page with halibut as well as an equally delicious version with shrimp!) (low carb, low fat)

Thai Green Curry Shrimp
Large shrimp sautéed and served with a spicy Thai green curry sauce, shiitake mushrooms and sautéed peppers. Best served over jasmine rice. (low carb, low fat)

Creamed Salmon with Asparagus
This is a great comfort dish for salmon lovers! Flaked poached salmon in a very light cream sauce with fresh asparagus tips. (makes a great pot pie!!)

Basil Shrimp with Orzo & Feta
This has a fresh and light taste. My shrimp are very tender, never tough and over-cooked. Orzo is pasta shaped like large grains of rice or barley. The pasta is tossed with feta, lime and fresh basil. This dish is good hot or cold. (low fat)

Tilapia Piccata

Calypso-Spiced Tilapia with Black Bean Purée

Mediterranean Salmon Cakes
Flaked poached salmon in delicious cakes with olives, chickpeas and Mediterranean spices and fresh cucumber-yoghurt sauce on the side. Crabcake lovers, look out! (low fat)

Mustard-Crusted Salmon with Roasted Leeks
This dish is so pretty you almost won't want to eat it! The salmon is coated with mustard seed, seared on both sides until just perfectly done and then topped with roasted shredded leeks and a beautifully red beet vinaigrette. It's a work of art! (low carb, low fat)

Scampi with Artichoke Hearts
Great tasting plump juicy shrimp sautéed in olive oil instead of butter with quartered artichoke hearts and a sprinkle of Parmesan. (low carb, low fat)

Pad Thai
Pad Thai literally means "in the style of Thai cooking." I once heard it was the entrepreneurial Chinese who first developed this dish with the purpose of introducing Thai-style cooking to their country. At any rate, my Pad Thai, a "pleasantly" spicy blend of rice stick, shrimp, crushed peanuts, sprouts, eggs and my own fish sauce, is equally delicious! (For a vegetarian variation, I can omit the shrimp.) (low fat)

Tilapia with Almond Chermoula
"Chermoula" is a Moroccan herb paste similar to Italy's pesto. This one is made with cilantro, mint and toasted almonds. A little cayenne is added to give it just a little kick. The paste is spread over the top of the fish and baked. The chermoula really works will with the tilapia, which also happens to come to us from Africa. (low carb, low fat)

Seared Shrimp & Scallops with Asparagus & Scallions
This delicious Mediterranean style dish tastes great hot or cold. The shrimp and scallops are quick-seared to seal in juices and served with sautéed asparagus in a balsamic sauce. (low carb, low fat)

Scallops in Saffron Cream with Spinach
Sea scallops are seared and served in a low fat saffron-infused spinach cream sauce. (low carb, low fat)

Grilled Swordfish with Eggplant Salad
When swordfish is grilled properly it has a smooth, buttery texture. I grill the eggplant right alongside the swordfish and then toss it up with chopped fresh tomatoes and grilled red onions. When I eat this dish it feels like I'm eating something really healthful-the salad particularly gives a very satisfying feeling. If you prefer something other than swordfish, I've found salmon does well in this dish, too. (Do not freeze this dish!) (low carb, low fat)

Poached Salmon with Cucumber Dill Sauce
This dish is best enjoyed cold. Tender, moist fillet of salmon topped with a deliciously cool, refreshing cucumber and dill sauce. Salmon lovers know this dish well! (low carb, low fat)

Soups

Chicken and Sausage Gumbo
The most popular gumbo, this one is made with chicken pieces and andouille sausage. It's thick and dark brown, almost like a gravy. And it's good! When Cajuns think of comfort food, this is what they make.

Mexican Black Bean Soup with Sausage
This is a very hearty, very spicy soup of black beans and smoked pork sausage. Seasoned with cumin, cilantro and lime juice.

Tortilla Soup
A Tex-Mex classic, this soup consists of bits of white or dark chicken, tomatoes, chipotle peppers and strips of corn tortilla. Chicken soup for the Mexican soul in you!

Vegetarian Dishes

Baked Barley with Shiitake Mushrooms & Caramelized Onions
This is my all-time favorite vegetarian dish! It has a great meaty taste and the barley is very satisfying. (low fat)

Eggplant Parmigiana
This classic needs no introduction! Big hearty rings of eggplant coated and fried and topped with cheese. Served with a robust tomato sauce. I also do a lighter version of this dish by baking the eggplant instead of deep frying. (low fat)

Four Grain Casserole
This is a tomatoey dish of millet, barley, buckwheat groats and short-grain brown rice. A good boost of protein can be gotten by adding some tofu. (low fat)

Quiche
There are as many different versions of quiche as there are cooks. Some that I do that are good are Brock-Chee, Lorraine, Grecian (Feta!), Tomato.

Vegetarian Stuffed Peppers
Red peppers halved and stuffed with a mixture of short-grain brown rice and mushrooms and spiced with chili powder. (low fat)

Spinach Lasagna
Try this vegetarian version. I think it's better than the meat one. (low fat)

Indian-Spiced Cauliflower & Potatoes with Whole Cumin Seed
This is a very strongly flavored dish and can be hot depending on how much chilies used. The ruling flavor is cumin. This dish is very satisfying and can be tasted on every square inch of your tongue. Firm tofu sautéed in with it will give it the protein it needs to become a main dish. (low carb-sans potatoes, low fat)

Lentils with Spinach and Ginger
This very nourishing Indian dish consists of yellow lentils cooked into a kind of thick soup stirred in with spinach. It's a little spicy but pleasantly seasoned. (low carb, low fat)

Dry Moong Dahl
This is the same as the above only the dish is more the consistency of a bowl of cooked barley. (low carb, low fat)

Thai Green-Curry Tofu
Firm tofu, cubed and fried and simmered in a spicy coconut sauce. (also great with shrimp!) (low carb, low fat)

Thai Curried Noodles with Peppers & Tofu
This dish has a nice rounded flavor typical of Thai dishes, a little sweet and a little heat. Yellow curry. (low fat)

Chinese Fried Noodles with Spinach
This is a great dish. Lots of shiitake mushrooms, bean sprouts and spinach stir-fried with egg and aromatic veggies. Served with lo mein or rice noodles. (low fat)
